It's good to be snowed in when...

...there is homemade wheat bread in the oven and a freezer full of local meat (beef and pork). We still have a 26 pound turkey in there. I'm half tempted to ask DH to take it out to the workshop and buzz saw it in half!

I have three one-gallon bags of shredded zucchini in there. Other than a simple chocolate-zucchini cake (that only calls for 2 cups of zucchini), does anyone have ideas on what to do with all the rest?

I've never tried them with frozen zucchini but I would think as long as you let it thaw and then get all the water you can out of it, it would work just fine.

Make my mom's famous zuchinni dressing. Goes well with turkey instead of traditional stuffing.

1 box stove top chicken stuffing mix
1 can cream of chicken soup
8 oz sour cream
½ cup chopped onion
½ cup chopped or grated carrots
3 Cups grated zuchinni

Mix it all together, put in 13X9 pan and bake at 350 for about 45 minutes

Thanks for the ideas. I tried the stuffing tonight but I had to modify as follows:
1 small loaf of homemade wheat bread (dried out because no one dared to cut into it)
celery (instead of carrots)
fresh mushroom pieces
cream of mushroom soup (no cream of chicken)
salt, pepper, garlic powder, Lawry's
I browned some American cut pork chops and then laid them on top & baked it all together. Yum!
